Rich Mediterranean Chickpea Stew in Tomato Sauce

This hearty, comforting stew is a staple for the modern family. It’s a "pantry-to-table" lifesaver that delivers deep, complex flavors in under 30 minutes. The secret lies in the balance of earthy cumin, a touch of warm cinnamon, and the natural sweetness of date syrup to round out the acidity of the tomatoes.

Ingredients
  

  • Chickpeas: 2 cans 15 oz each chickpeas, thoroughly rinsed and drained (or 3 cups cooked chickpeas).
  • Olive Oil: 3 tbsp extra virgin olive oil.
  • Onion: 1 large yellow onion finely diced.
  • Garlic: 5 cloves of garlic minced or thinly sliced.
  • Tomato Paste: 2 generous tbsp high-quality tomato paste.
  • Date Syrup: 1 tbsp Date Syrup 100% pure.
  • Water: 2 cups boiling water adjust for desired consistency.
Spice Blend:
  • 1 tsp sea salt or to taste.
  • ½ tsp freshly ground black pepper.
  • 1 tsp ground cumin.
  • 1 tsp sweet paprika.
  • ½ tsp turmeric.
  • A pinch of cinnamon approx. 1/8 to 1/4 tsp.
  • Optional: ¼ tsp red chili flakes for a subtle kick.

Method
 

  1. Sauté the Aromatics: Heat the olive oil in a wide pot or deep skillet over medium heat. Add the diced onion and sauté for 5–7 minutes until translucent and slightly golden.
  2. Infuse the Garlic & Spices: Add the garlic and sauté for another minute until fragrant. Stir in the tomato paste, date syrup, and the entire spice blend (salt, pepper, cumin, paprika, turmeric, and cinnamon).
  3. Toast the Paste: Cook the mixture for 1–2 minutes, stirring constantly. This "blooms" the spices and caramelizes the tomato paste and date syrup, creating a rich, savory base.
  4. Simmer: Add the chickpeas to the pot and stir to coat them in the aromatic base. Pour in the boiling water. Bring to a gentle boil, then reduce the heat to low.
  5. Develop Flavors: Cover and simmer for 15–20 minutes. The sauce should thicken and the chickpeas should become tender and flavorful.
  6. The Finishing Touch: Taste and adjust seasoning if necessary. For a fresh finish, squeeze a bit of fresh lemon juice or garnish with chopped parsley before serving.

Notes

This stew is perfect for Meal Prep. The flavors continue to develop overnight, making it an excellent lunch option for the next day. Serve it over a bed of fluffy basmati rice, couscous, or with a thick slice of crusty sourdough bread to soak up the sauce.
