- Sauté the Aromatics: Heat the olive oil in a wide pot or deep skillet over medium heat. Add the diced onion and sauté for 5–7 minutes until translucent and slightly golden.
- Infuse the Garlic & Spices: Add the garlic and sauté for another minute until fragrant. Stir in the tomato paste, date syrup, and the entire spice blend (salt, pepper, cumin, paprika, turmeric, and cinnamon).
- Toast the Paste: Cook the mixture for 1–2 minutes, stirring constantly. This "blooms" the spices and caramelizes the tomato paste and date syrup, creating a rich, savory base.
- Simmer: Add the chickpeas to the pot and stir to coat them in the aromatic base. Pour in the boiling water. Bring to a gentle boil, then reduce the heat to low.
- Develop Flavors: Cover and simmer for 15–20 minutes. The sauce should thicken and the chickpeas should become tender and flavorful.
- The Finishing Touch: Taste and adjust seasoning if necessary. For a fresh finish, squeeze a bit of fresh lemon juice or garnish with chopped parsley before serving.
