Mediterranean Romaine Salad with Carrots and Peppers

Ingredients
  

  • 12 Romaine lettuce leaves washed, thoroughly dried, and chopped
  • 2 Persian cucumbers finely diced (preferably cored)
  • 1 red bell pepper finely diced
  • 2 small carrots peeled and coarsely grated
  • ½ red onion finely chopped
  • Dressing: 2 tbsp extra virgin olive oil 3 tbsp fresh lemon juice, 1 garlic clove (minced), ⅓ tsp salt, a pinch of black pepper, and ½ tsp sumac.
Optional Add-ins (Toppings & Variations):
  • Fresh Herbs: A small handful of finely chopped fresh parsley cilantro, or mint.
  • Crunch & Texture: ¼ cup coarsely chopped walnuts toasted just before serving

Method
 

  1. In a small jar or bowl, whisk together all dressing ingredients (olive oil, lemon juice, minced garlic, salt, black pepper, and sumac) until well combined.
  2. In a large salad bowl, combine the chopped lettuce, diced cucumbers, bell pepper, grated carrots, and chopped red onion. If using fresh herbs, toss them in as well.
  3. Just before serving, pour the dressing over the salad and toss gently to coat. Top with the chopped walnuts if desired, and enjoy fresh!
