Mediterranean Green Apple & Celery Crunch Salad

This salad is the ultimate "freshness bomb." It balances the tartness of Granny Smith apples with the earthy tones of celery and fresh herbs. It’s light, refined sugar-free, and brings a vibrant Mediterranean touch to any meal.

Ingredients
  

The Fresh Base:
  • 2 Green Apples Granny Smith, cored and thinly sliced into matchsticks or half-moons.
  • 3-4 Celery stalks including the leaves, thinly sliced.
  • 1 Small Red Onion very thinly sliced into half-moons.
  • 1 Large bunch of Fresh Parsley or Cilantro, coarsely chopped.
The Signature Dressing:
  • 3 tbsp Extra Virgin Olive Oil.
  • Juice of ½ Large Lemon adjust to taste.
  • A pinch of Sea Salt and freshly ground black pepper.
Optional Upgrades For extra texture & flavor:
  • ¼ cup Walnuts or Pecans lightly toasted and chopped.
  • 2 tbsp Dried Cranberries no added sugar.
  • A handful of Fresh Mint leaves chopped.
  • 1 tsp Natural Date syrup

Method
 

  1. Prep the Apples:
    To keep the apples from browning, toss them with a squeeze of lemon juice immediately after slicing.
  2. Combine:
    In a large mixing bowl, combine the sliced apples, celery, red onion, and chopped herbs (parsley/cilantro and mint if using).
  3. Dress the Salad:
    In a small jar or bowl, whisk together the olive oil, lemon juice, sea salt, pepper, and silan (if using) until well combined.
  4. Toss:
    Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  5. Garnish:
    Just before serving, top with the walnuts and cranberries to ensure they stay crunchy.

Notes

Tips for the Perfect Salad:
Make it ahead: You can chop the vegetables and herbs a few hours in advance, but keep the dressing separate and add it right before serving to keep everything crisp.
Kid-Friendly: If serving to children, you can dice the apples into small cubes instead of matchsticks for easier eating.
Variation: For a more festive look, add a handful of fresh pomegranate seeds during the winter season.
