Method
- Preheat the oven to 180°C / 350°F (conventional bake).
- Arrange the chicken pieces, red onion (or shallots), garlic, and mushrooms in a large baking dish.
- In a small bowl, mix olive oil, date syrup, honey, crushed garlic, paprika, cumin, salt, and black pepper.
- Pour the seasoning mixture over the chicken and vegetables and toss gently until evenly coated.
- Add the water to the bottom of the pan.
- Sprinkle oregano and lemon zest evenly over the dish.
- Bake uncovered for about 1½ hours, until the chicken is golden, tender, and coated in a rich sauce.
