Mediterranean Baked Chicken with Mushrooms, Dates Syrup, Honey and Lemon

This Honey & Date Roasted Chicken is a delicious and easy Mediterranean dish.

Ingredients
  

  • 8-10 chicken pieces (drumsticks, wings, thighs, or a mix)
  • 1 large red onion or 5–6 shallots, roughly chopped
  • 3 garlic cloves, roughly chopped
  • 2 packs fresh mushrooms, halved (button mushrooms and portobello recommended)
  • ½ cup water
  • 1-2 tsp fresh oregano leaves (or 1 teaspoon dried)
  • Zest of 1 lemon
Seasoning
  • 2 tbsp olive oil
  • 2 tbsp date syrup
  • 2 tbsp honey
  • 1 tsp crushed garlic
  • 1 tsp sweet paprika
  • 1 level tsp ground cumin
  • 1 tsp salt
  • Freshly ground black pepper, to taste

Method
 

  1. Preheat the oven to 180°C / 350°F (conventional bake).
  2. Arrange the chicken pieces, red onion (or shallots), garlic, and mushrooms in a large baking dish.
  3. In a small bowl, mix olive oil, date syrup, honey, crushed garlic, paprika, cumin, salt, and black pepper.
  4. Pour the seasoning mixture over the chicken and vegetables and toss gently until evenly coated.
  5. Add the water to the bottom of the pan.
  6. Sprinkle oregano and lemon zest evenly over the dish.
  7. Bake uncovered for about 1½ hours, until the chicken is golden, tender, and coated in a rich sauce.
