Golden Skillet Chicken with Red Onion and Warm Spices

Ingredients
  

  • 1 medium red onion finely chopped
  • 700–800 gram chicken breast cut into bite-sized cubes
Seasoning
  • 1 tbsp oil
  • 1 level tsp salt
  • ½ tsp turmeric
  • ½ tsp ground cinnamon
  • ½ tsp ground cumin
  • Black pepper to taste
For cooking
  • 2 tbsp oil
To finish
  • 2-3 tbs fresh parsley finely chopped

Method
 

  1. Place the chicken cubes in a bowl and drizzle with 1 tablespoon of oil. Add salt, turmeric, cinnamon, cumin, and black pepper. Mix well until evenly coated.
  2. Heat a wide non-stick skillet over medium heat with 2 tablespoons of oil. Add the chopped red onion and sauté until soft and lightly golden.
  3. Add the seasoned chicken to the skillet. Cook for about 3 minutes over medium heat, then turn the pieces and continue cooking for another 6–7 minutes, stirring occasionally, until the chicken is fully cooked and lightly golden.
  4. Taste and adjust seasoning if needed.
  5. Remove from heat and sprinkle with fresh chopped parsley just before serving.

Serve with rice, couscous, or warm flatbread, and a squeeze of fresh lemon if desired
