Creamy Green Tahini Sauce

This Green Tahini Sauce is a vibrant, creamy dressing made with fresh parsley, garlic, and lemon. It takes only 5 minutes to whip up and serves as the perfect nutrient-dense topping for salads, roasted vegetables, or grain bowls.

Ingredients
  

  • 1 cup raw tahini
  • 1 garlic clove crushed (for a milder, balanced flavor)
  • ¾ cup cold water (adjust to reach your desired consistency)
  • Juice of 1/2 medium lemon
  • ½ tsp salt
  • ½ cup fresh parsley chopped, (optional, for a fresh herbal touch)

Method
 

  1. In a bowl, whisk together the tahini, garlic, water, lemon juice, and salt until smooth and creamy.
  2. Stir in parsley if using.
  3. Taste and adjust: add a little more tahini to thicken or more water to thin.
  4. Store in the fridge for up to a week.
