Balsamic & Thyme Roasted Salmon

Ingredients
  

  • 1.3 - 1.5 lbs Fresh Salmon Fillet, cut into 4 even portions
  • 12-15 Cherry Tomatoes halved
  • 1 Medium Red Onion coarsely chopped
  • 4-6 Fresh Thyme Sprigs
For the Roasted Vegetables:
  • 1.5 tbsp Extra Virgin Olive Oil
  • A pinch of sea salt and freshly cracked black pepper
For the Healthy Balsamic Glaze:
  • 1.5 tbsp Extra Virgin Olive Oil
  • 2 tbsp Freshly squeezed lemon juice
  • 3 Garlic cloves minced
  • 1.5 tbsp Aged Balsamic Vinegar
  • ½ tsp Raw honey or pure maple syrup
  • ½ tsp Smoked paprika
  • Sea salt & black pepper to taste

Equipment

  • 1 Large Sheet Pan
  • 1 Small Mixing Bowl
  • 1 Basting Brush
  • Parchment Paper

Method
 

  1. Preheat: Heat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Prep the Base: In a bowl, toss the cherry tomatoes and chopped onions with olive oil, salt, and pepper. Spread them across the baking sheet.
  3. Create the Glaze: In the same bowl, whisk together the olive oil, lemon juice, minced garlic, balsamic vinegar, honey, and smoked paprika.
  4. Assemble: Place the 4 salmon portions on the sheet pan. Brush the balsamic glaze generously over each fillet.
  5. Add the Herbs: Place the fresh thyme sprigs over the salmon and vegetables.
  6. Roast: Bake for 15-20 minutes until the salmon is flaky and the tomatoes are blistered.
  7. Serve: Serve warm with an extra squeeze of fresh lemon and a side of your favorite whole grain.
